How To Peel A Large Number Of Cloves Quickly.

Open the bulb and separate the cloves from each other. Boil a quart of water, dunk the cloves in for 1 minute, rinse under cool water from the tap. The clove wrappers will slip right off the cloves with a little squeeze.

Roasted Garlic

Cut the bulb across the equator exposing all the cloves. Place halves on foil, douse with some olive oil (or any oil), and close the foil. Bake at 350° F for 40 minutes. Squeeze the soft creamy cloves onto toasted baguette slices or into your favorite recipe, mild and delicious.

Garlic Basil Pesto

In a food processor or chopping very finely combine the following: 4 large cloves of garlic, 1/2 cup of basil leaves, 1/4 cup of walnuts, a squeeze of lemon, 1/2 cup parmesan cheese, and enough oil to make it spreadable or if you like enough oil to make it pourable. Use on pasta, on toasted french bread, or on a tomato/mozzarella salad.

Garlic Butter

Finely chop 5-10 cloves of garlic, mash into 2 sticks of soft butter, add a 1/2 teaspoon of salt, mash well. Store in 1 cup containers in the refrigerator or freezer. Note: freshly chopped garlic is hot, some hotter than others, and within 24 - 36 hours the hotness lessens and it becomes milder. Use on french bread, for dipping seafood into melted garlic butter, adding to mashed potatoes for garlic potatoes, for topping your favorite steak and last but not least, to make a regular hamburger into a garlic butter burger.

French Onion Soup

Why French Onion Soup? Garlic, Onions, Leeks, Shallots, and Elephant Garlic (not a true garlic, more a leek) all are delicious together in French Onion Soup.

I like to chop instead of slice onions, it makes it much easier to maneuver onions on a spoon when I'm eating it. The members of the allium family are onions, shallots, leeks, elephant garlic and garlic. They are similar flavors that marry well. These are all toxic to cats and dogs, so no sharing with our furry loved ones! How much is 5 lbs of alliums? Imagine onions the size of a softball, that is just a little less than a pound, so to begin, 5 or 6 softball sized onions.

Combine 5 lbs of chopped onions, leeks, shallots, and elephant garlic sautéed in 8 oz of butter or olive oil. Cook these down until they begin to brown (caramelize).

Add 2 quarts of broth. (chicken, vegetable, beef), 1 cup of dry red wine, 1 teaspoon thyme, 2 bay leaves, 4 large chopped cloves of garlic, 2 cups of tomatoes (puree, stewed, fresh, sauce), and 2 tablespoons of worcestershire sauce.

Cook this down, reducing the volume until you have a velvetty textured soup. No need to thicken it. Put it in small oven safe dishes, top with crusty toasted bread cubes or slices, add 1/2 cup swiss cheese to the top each and bake until the cheese is bubbly. And enjoy!

Methods To Store Garlic

Freezing. Peeled and chopped or sliced garlic can be mixed with oil or water and frozen in ice cube trays, then stored in zip lock bags. Or it may be chopped, mixed with oil, stored flat in zip lock bags in the freezer. (this is one method I use)

Dehydrating. Whole or sliced or chopped, dehydrated, it can be stored this way in sealed jars or bags, or ground into a powder. (this is another method I use)

Canning or canning in oil. Although garlic canned or jarred in oil is available in the supermarkets, there are no approved home canning methods of canning garlic. Please consult the Ball Blue Book and University Extension offices methods and for more information.

Storing in oil. It should only be kept in oil less than a week and refrigerated. There is a botulism risk with storing herbs and garlic in oil and I don't recommend this method.

What if my garlic is sending out green shoots? They can be planted, shoot side up. They can be eaten and the green shoots considered a delicacy in Chinese and Japanese cooking. They can be chopped and stored as listed above.

Storing garlic using the above methods will give you a mild (not hot, hot harsh) garlic flavor. When you chop garlic certain chemicals (allicin) within the garlic are activated which are hot to the taste, this mellows within 24-36 hours.
